Banana Bread Breakfast Quinoa


With all the yummy taste of indulgent banana bread without the sugar, flour, & guilt! This breakfast treat will have you going bananas!!

1 very ripe banana – mashed
¼ cup dry quinoa
¼ cup almond milk (or milk of your choice)
2 Tbsp walnuts
½ tsp pure vanilla extract
¼ tsp cinnamon
Cook the quinoa on the stove to package instructions. After the quinoa has finished cooking (while over low heat), stir in the almond milk, mashed banana, vanilla, and cinnamon. Mix the walnuts into the quinoa or add on top. Transfer to a bowl and enjoy warm. Yield- 1 serving

  2. Hi, I just found your blog listed, at the Honeyville Grain website, so I thought I would stop and browse a bit, and say Hi. This looks yummy and filling, but too high in carbs for me, as I follow a low carb woe. I'll see if I can mix in some vanilla protein powder to boost that aspect and maybe reduce the banana to 1/3 or so. Might experiment with freezing it as well. When I have time, I might look a little further, on your site, as I love quinoa, and I love porridge. Thanks for the recipe.

    Before I leave, I just wanted to mention something, about listing or documenting your blog name on every picture you post. There are folks out there who think nothing of stealing photos from food blogs and then changing one or two ingredients in a recipe, and then claiming not only the picture, but the recipe as theirs. Don't let this happen to you.

  3. Hi there Lilo, being a type 1 diabetic I too am very cautious with my carb intake. I'm always shuffling recipes/ingredients around to make it more healthy. My husband and kids are the opposite and want nothing to do with the "health food" So my blog is full of all the carb/sugar packed recipes (we know how how yummy they are!) but also some healthy indulgences as well. Thank you for the warning about people stealing recipes & photos. I am so NOT computer savvy so I hope I can figure out how to put my blog name across each picture!(shouldn't be too hard right?) I put a lot of time & effort into getting those pictures just right. I appreciate your feedback!
